How Dubai Chocolate Sent the World Nuts for Pistachios

Pistachios had been quietly making confectionery fabulous for centuries. Then Dubai chocolate went viral, TikTok completely lost the plot, and suddenly pistachio cream was being stuffed into chocolate bars, croissants, milkshakes, cookies, cakes and almost anything else that stood still long enough.

We can't say we were surprised. Pistachio has always had that effect on people.

Why Pistachio and Chocolate Work So Well

At the heart of Dubai chocolate is a very good idea: rich chocolate paired with creamy pistachio.

Chocolate brings sweetness and depth, while pistachio adds a softer, roasted nuttiness that feels rich without being too heavy. Together, they are smooth, indulgent and just a little bit fancyโ€”the sort of combination that tastes as though someone has gone to quite a lot of trouble, even when the internet has gone to far too much trouble.

Our Take on the Pistachio Craze

What caught our attention was not simply the viral chocolate bar, but the flavour combination at the centre of it.

In our Dubai Cream Pistachio & Chocolate Nougat, we combine pistachio cream, pure pistachio paste, Australian pistachios and chocolate with our soft handmade nougat.

The pistachio cream gives it richness, the pure pistachio paste brings a deeper pistachio flavour, and the Australian pistachios add texture, colour and the unmistakable taste of the real nut.

We leave out the crisp shredded pastry used in traditional Dubai chocolate because it does not suit the shelf life we need from our nougat. Instead, our version is all about creamy pistachio, chocolate, real nuts and that lovely soft nougat chew.

Pistachio Was Already One of Our Favourites

Our love affair with pistachio began well before social media decided it was the flavour of the moment.

Across our nougat range, we pair pistachio with raspberry and vanilla, rosella, strawberry and matcha, yuzu and mandarin, rose, fruit and chocolate. Then there is our Creamy Pistachio Fudge, where the same flavour becomes smooth, rich and dangerously easy to keep cutting "just one more little piece" from.

Pistachio changes depending on what it is paired with. With raspberry, it becomes bright and fresh. With rose, it becomes fragrant and elegant. With citrus, it livens up, while chocolate makes it richer, deeper and much harder to leave alone.

Why Everyone Suddenly Wants Pistachio

Part of the appeal is obvious. Pistachio looks beautiful, and its natural green colour immediately stands out, especially beside chocolate.

But the flavour is what keeps people coming back. Pistachio can be creamy, roasted, earthy, slightly sweet and almost floral, sometimes all at once. It tastes special without needing to make a great fuss about itself.

And unlike some food trends that appear overnight and vanish just as quickly, pistachio has been used in exceptional confectionery for hundreds of years.

Dubai chocolate did not invent pistachio. It simply reminded the world how good it is.
